Banana Republic

Hey girls. I know at the last Bunko I said that we were having Friends and Family days at Banana Republic. Well it is this weekend. Sweet Potato Casserole

Here is the super yummy Sweet Potato Casserole that Sesily brought to Bunko. I begged for the recipe because they were so yummy I wanted to share with my family this coming Thursday.

½ cup sugar

½ cup butter or margarine softened

1/3 cup milk

2 eggs beaten

1 tsp vanilla extract

3 cups mashed cooked sweet potatoes

1/3 cup margarine or butter

½ cup flour

1 cup packed brown sugar

1 cup chopped pecans

Combine sugar ½ cup butter/marg, milk, eggs, and vanilla in a bowl and mix well. Add the sweet potatoes and mix until smooth. Spoon into a 2 quart baking dish. Melt 1/3 cup butter/marg in sauce pan. Combine with flour, brown sugar, and pecans in a bowl and mix until crumbly. Sprinkle over the sweet potatoes, bake at 350 degrees for 25 minutes or until golden brown.

Rolls Recipe

For those that don't already have this recipe from Jen Reese (aka those that are not in my ward), here is the Recipe of the Rolls that I brought on Thursday.
  • 2 T. Yeast
  • 1/2 c. scalded milk
Mix together with a pinch of salt and sugar (to help activate the yeast). Set aside.
  • 1/2 c. butter, cubed
  • 1/2 c. sugar
  • 2 eggs
  • 1 t. salt
  • 2 c. scalded milk
  • 6-7 c. flour
Mix butter, sugar, eggs, salt and milk together. Add the yeast mixture and then gradually add the flour until dough is soft, but not sticky. Knead for a few minutes until dough is smooth. Cover and let rise until double (45 min - 1 hour). Roll out dough and brush with melted butter. Cut using pizza cutter into 1.5 by 6 inch strips. Roll up strips from short end and brush with melted butter. Place on greased pan and let rise again (45 min - 1 hour). Bake at 400 degrees for 15-20 min (depending on oven and your liking, I baked them 14 min and I think it was too long), or until golden brown. Immediately brush again with melted butter.
