Rich 'n' Cheesy Macaroni

Not to be outdone by Sesily...here is the mac-n-cheese recipe from last night. I am telling you I didn't make this for a long time because I was afraid when I read the ingredient list - but as you tried last night it turned out pretty tasty.

2 1/2 c. uncooked macaroni
4 T. butter
1/4 c. flour
1 t. salt
1 t. sugar
2 c. milk
8 oz. Velveeta
1 1/3 c. small curd cottage cheese
2/3 c. sour cream
2 c. shredded cheddar cheese (I used sharp, but that was just what I had)

Cook noodles according to directions; drain. In saucepan, melt butter. Stir in flour, salt and sugar until smooth. Gradually add milk. Bring to a boil and cook and stir for 2 minutes. Reduce heat, add Velveeta and 1 c. cheddar. Stir until melted. Add cottage cheese and sour cream. Add drained noodles. Mix together and pour into a greased 9x13. Sprinkle with remaining cheddar over top. Bake at 350 for 30 min.

Creme Brulee French Toast

MMM...

1/2 cup butter
1 cup brown sugar
2 TBSP corn syrup
1 loaf of Texas toast (thick sliced break)
5 eggs
1 1/2 cups half and half cream
1/4 tsp salt
1 tsp vanilla

in a small saucepan melt butter, brown sugar, and corn syrup over medium heat until smooth, stirring occasionally. Pour mixture into large, greased jelly roll pan (cookie sheet) Spread to cover completely. Place 12 slices Texas toast bread in a single layer to cover pan. mix together eggs, cream, salt, and vanilla. Spoon mixture over each piece of bread. Cover and refrigerate overnight. Bake uncovered at 350 degrees for about 30 minutes. remove from the pan and serve. If not serving immediately, turn each slice over( this will prevent bread from sticking to the bottom of the pan.)

Creme Brulee syrup

1/2 cup of butter
1 cup buttermilk
1 cup sugar
2 TBSP white corn syrup

boil together over medium heat for 7-10 Minutes stirring constantly

after you remove from the heat
add:
1 tsp vanilla
1/2 tsp baking soda

Mac Grill Pasta Milano

Marilyn's Bow Tie Pasta

6oz bow tie pasta
1/2 lb. boneless skinless chicken strips (I BBQ the chicken then cut it up)

or saute the chicken in 2 Tbsp. olive oil or butter- 5 minutes remove the chicken
salt and pepper the chicken (I use season pepper and Greek seasoning)

in the same pan, add
1Tbsp. butter
2 green onions (white bulb and bit of green)
saute'

Add:
1tsp. dried thyme
1/2 tsp garlic powder
2 cups whipping cream- heavy cream
3/4 Cup shredded Parmesan cheese
1/2 tsp salt
1/2 tsp pepper

simmer 30 minutes uncovered. add the chicken to make it more tender

options:
3/4 cup Mushrooms
1 pkg sun dried tomatoes chopped

serve with cooked pasta

Chicken Enchilada Casserole

Remember that time we were all at Bunco and we were like, "Let's totally post all our easy recipes on the Bunco blog?" That was a good time . . . Oh wait, I see no recipes here!

So, as promised, here's the recipe for my chicken enchilada casserole. The measurements aren't exact because I don't measure things when I cook but this at least gives you an idea.

-1 Family size can of Cream of Chicken soup
-1 package of flour tortillas (any kind: wheat, regular, low carb)
-1 can of canned chicken (12.5 oz)
-Salsa (to your liking-I usually use about a cup)
-1 cup of milk
-Shredded cheese (optional and add as much or as least as you like)

Cut tortillas into approximately 1-2 inch squares. Drain canned chicken. Mix all the ingredients together in a bowl and put in a casserole dish sprayed with Pam. You can put more shredded cheese on top if you like it nice and fattening. Cook on 360 degrees for 50-60 minutes. Very easy; prep time is less than 10 minutes.

Feb Bunko






Girls, I had so much fun at bunko this month.  Thank you all for making it the day I look forward to most all month!  Hope that my salsa didn't give all you pregnant girls too much heartburn!  Now let's get some recipes posted on here so we can all enjoy the food you've been bringing each month, or just get some new ideas.  Anjie, I think I speak for everyone this month- please share your enchilada casserole recipe.  And Sesily, I have been dying to make that pasta you made in Dec.  Can you please share your recipe?  Enjoy the pictures!

Be Festive

Kara and I dragged our husbands to the Ethel M. Chocolate Factory to check out the lights in the cactus garden, and we loved it! So if anyone is looking for something fun and cheap to do, we would recommend it for sure. The kids liked all the lights, but not Santa Clause so much. I was seriously impressed at all the lights, although I wouldn't want to be the one putting them on...I mean, they are cactuses (cacti?) for crying out loud. Ouch.

Anyway, I hope you all have a very Merry Christmas! For those of you traveling...be safe!!
